MasterChef Australia judge Jock Zonfrillo has revealed the five ingredients he always keeps in his kitchen for simple homemade classics.

The Scottish chef, who was born in Glasgow and lives in Melbourne, said he never runs out of pasta, pancetta and parmesan – staples that that form the foundation for many traditional Italian dishes.

The 44-year-old also swears by lemons and HP sauce, which can be used to flavour almost any meal.

The father-of-four – who has son Alfie, two, and newborn daughter Isla Generosa with his third wife, Lauren Fried, and daughters Ava, 19, and Sophia, 14, from previous marriages – said he’s never gone on a diet because he ‘loves food too much’.

With his five go-to ingredients, Jock told news.com.au he can make ‘a lot of different dishes’ that mean he never goes stuck.

As for healthy eating, the famously foulmouthed chef known for his penchant for swearing admitted he doesn’t give it much thought.

‘Dieting isn’t my thing, I love food too much and also have such a fast metabolism I always seem hungry,’ he said.

‘I’m not really known for my health approach.’

Jock’s culinary explorations of indigenous communities, where food is considered a precious and finite resource, have instilled in him a passion for sustainable cooking.

‘One of the main lessons I’ve learnt is to give back more than you take, and that has become a core part of my life,’ he said.

Jock will be back on TV screens when MasterChef Australia premieres on Monday, April 19 at 7.30pm on Network 10.

He is joined on the MasterChef panel by celebrity chef Andy Allen and renowned food critic, Melissa Leong.
